Yes, unless they already have a oneway=* tag (e.g. oneway=no).

If you really want to prevent routing along them even if they already have bicycle=yes, then you'll want { set bicycle = no } - I haven't actually tested this myself.
Cool I do road cycling so unpaved tracks don't do my bike any favours. With the default style I'm at times being routed along these which is not what I want so I'd rather avoid any highway=track and highway=unsurfaced Cheers Paul
