maybe after adjusting values like product id, I am not sure about that.

When you specify the text file format it will use its typ file compiler to create the *.typ file and use that for the gmapsupp.img.

So, when you see differences using these two different ways you may have found a problem in the mkgmap typ file compiler.

Yes, that is correct. It should also fix up the family-id and product-id as it copies it into the gmapsupp, as long as any --family-id and --product-id options occur before both the txt/typ file and the map tiles. ..Steve
